It is advisable to consume enzyme-rich foods raw – such as fruit, sprouts and vegetables – and choose the most colourful ones, as they contain accessory molecules like phytochemicals. Enzymes are essential in speeding up all cellular reactions and making up for any deficiency, which can be found in individuals who, following a diet rich in refined foods, may suffer from fatigue and difficulty losing weight.

A diet rich in fresh foods and functional substances like enzymes helps to reduce abdominal bloating, slim down buttocks and thighs, and reactivate metabolism, which is sometimes slowed down due to the typical modern diet, mostly composed of harmful and long-lasting foods.

WHAT ARE ENZYMES

Enzymes are protein molecules present in every living being. Their role is to accelerate all reactions that occur in the body. We all know the functional importance of digestive enzymes; just think that pre-digestion already occurs during food chewing thanks to the presence of salivary enzymes, but there are specific ones in the stomach, pancreas, liver, and intestines. A deficiency in them leads to food intolerances: in this condition, the molecules present in the food we have ingested, particularly the protein component, are not adequately broken down into smaller parts suitable for absorption in the small intestine. Over time, this leads to inflammation of the intestinal villi, followed by bloating, inadequate production of B vitamins, and weakening of the immune system.

Therefore, if we are deficient in enzymes or do not receive them in adequate quantities, our digestion will become longer and more laborious, and the body will accumulate waste and bloating.

IN VEGETABLES

  • Broccoli

IN FRUIT

  • Strawberries: are rich in enzymes capable of activating fat metabolism.
  • Kiwi: contains actinidin, a truly unique enzyme not found in any other fruit. This substance has proteolytic properties that can also be exploited to tenderize meat before cooking. Simply let the meat slice rest for about 20 minutes after placing a few kiwi slices on both sides. The meat will be very tender, ready to be roasted or grilled.

    ENZYME-RICH FOODS

    Various fresh sprouts; fruit and vegetable juices; fermented foods such as kefir, tamari, tofu, miso, umeboshi plums; ginger, organic honey, oil seeds (walnuts, almonds, pistachios).

    In general, these foods should be eaten at the beginning of the meal in a salad.
